There are a few options.
Jauce - Somewhat high fees but allows you to bid live (so you don't have to wait for a representative to bid for you, if it is time sensitive.) Holds for a limited time before you pay a storage fee.
Celga - My service of choice. Slightly cheaper fees for some items (depends on price range) and holds indefinitely without a storage fee. Down side, it is not live bidding. You send in the bid link and a rep will address it within a few hours. (They do not place the bid until the last 24 hours or so, so that you do not drive up the price of the auction.)

For Celga I imagine you would really have to look at how much time is left. As if you put in the request too late then you will miss it or you would have to use Jauce.

Yeah. As long as it has a few hours left you'll usually be fine. Most of the time Celga places my bids within the hour.
Another thing I forgot to mention; an issue with Celga (and I imagine any other popular bidding service) is that some sellers do not want to sell to a deputy service. This means sometimes your bid will get cancelled, and you likely won't be able to get notice if this happens. So no matter what proxy you are using, be sure to check in the last few hours. If it looks like your bid has not been placed, E-mail the proxy to make sure that it wasn't cancelled. If it was, they can bid from another ID to resolve the issue. It doesn't happen often, but it does happen.
