I'm undertaking my very first custom model that requires cutting and gluing, but instead of sanding down rough edges, I want to try melting them, just a little. Of course, zoid plastic is flamable, so I don't want to make it too hot. Can anyone recommend a good temperature to work with?

I recommend room temperature sandpaper... or a Dremmel sanding drum. The risks of using a soldering iron to melt plastic edges is not worth it and hot wires are a major hazard.
