The short answer to your question is, the classic Tomy Zoids kits and therefore also Z-Knights are 1/72nd scale.
The slightly longer answer that you didn't really ask for is, there are different lines of different scales. In addition to Tomy's 1/72nd scale Zoids kits, they did also have a line of 1/24th scale models designed by Kow Yokoyama, but not counting the Zevle color variants, there were only nine of those. There are also the Tomytec 1/144th scale models, of which there weren't that many, but the line lasted for a surprising amount of time. And the new Zoids Wild models are 1/35th scale.
Kotobukiya's HMM kits based on the classic designs are 1/72nd scale, but they also had a short-lived line of action figures called Zoids Aggressive that were 1/100th scale, and two Z-Knights kits that for some reason are also 1/100th scale.
